The Perfect Holiday Starter: Butternut Squash Bisque and Stylish Table Setting Ideas

on

You’ve already curated the atmosphere, from linens to silverware, plates, and glasses. The candles are lit, incense is burning, but you forgot one important element: a side dish. Searching online for recipes is time consuming, and it’s difficult to know which ones will actually work for you and your guests. Hosting always comes with surprises, even for seasoned entertainers, so we’ve taken a recipe from celebrity chef turned Maure CEO, Maureen, and paired it with exquisite serving pieces that elevate this dish with elevated style. This combination is ideal for anyone looking for an easy side dish recipe, a holiday bisque recipe, or a simple fall entertaining idea.

Give yourself forty minutes for this recipe. Even if your guests arrive while the bisque is still simmering, it will only enhance the ambiance, filling the room with warm, spiced aromas and cozy autumn energy. Once it finishes simmering, simply blend with milk until smooth, and it will be ready to serve immediately.

The Dish

If you discover this recipe ahead of your hosting day, even better. This is one of the best make-ahead recipes, perfect for busy entertainers prepping holiday side dishes or fall dinner party menus. You can make it one or two days in advance, as this bisque reheats beautifully and saves precious oven space on the big day.

Dietary restrictions and food allergies are common, but this bisque works beautifully for most guests. Naturally vegetarian and gluten free, it can easily be adapted for dairy-free or vegan diets. Substitute the butter and milk with olive oil and dairy-free milk - try coconut cream for its silky texture! Choose your preferred dairy-free topping, and the dish remains just as satisfying.

Tips, Tricks, and Toppings

For a lighter bisque, simply add more broth before blending. For a richer, creamier version, finish with additional cream or butter.

If you have a little extra time, you can enhance the flavor by roasting the butternut squash before adding it to the pot. After sautéing your mirepoix of onion, celery, and carrot, add the roasted squash with the broth and simmer. This step deepens the flavor and adds a subtle nuttiness that feels perfect for fall hosting.

Finish either version of the bisque with delicious toppings. Beyond the classic crème fraîche and cinnamon, Maureen notes that she will “sometimes add crumbled feta and a handful of arugula sprouts or fresh tarragon for a savory contrast.” These toppings help transform this easy fall soup into a centerpiece-worthy dish for Thanksgiving, Friendsgiving, or any autumn gathering.

The Recipe

  • 2 Tablespoons butter (or olive oil if you prefer dairy-free)

  • 1 tablespoon olive oil

  • 1 large yellow onion - diced

  • 2 carrots - peeled and chopped

  • 2 celery stalks - chopped

  • 2 garlic cloves - minced

  • 1 medium butternut squash - peeled, seeded, and cut into 1-inch cubes

  • 4-5 cups vegetable broth (just enough to cover the vegetables)

  • Salt and freshly ground black pepper - to taste

  • ½ cup heavy cream or whole milk (use dairy-free cream if preferred)

  • Crème fraîche - for garnish

  • Ground cinnamon - for garnish

Instructions

  1. Sauté the base by melting butter and olive oil in a large pot over medium heat. Add the onion, carrots, celery, and garlic. Cook until softened and fragrant, about six to eight minutes.

  2. Add the butternut squash, season with salt and pepper, and let it cook for five minutes so it can absorb the aromatics.

  3. Pour in enough vegetable broth to fully cover the vegetables, bring the mixture to a boil, then reduce the heat and let it simmer uncovered for twenty-five to thirty minutes until the squash is tender.

  4. Blend until smooth. Once everything is cooked through, transfer the mixture to a blender and blend until completely smooth and silky, adding cream or milk and a bit of butter if you prefer a richer finish. Adjust the seasoning as needed.

  5. Serve by ladling the bisque into bowls, topping with crème fraîche, and finishing with a light sprinkle of cinnamon.
